Lao Nam Va — the translucent green grass jelly dessert that cools you down better than any air conditioner.

Grass jelly (Mesona chinensis) is simmered for hours until it sets into a dark, gelatinous block, then cut into translucent green strands and served over shaved ice with sugar syrup. The result is a jiggly, herbaceous, refreshing bite that is pure Lao street dessert energy.

The green strands are not dyed — that's the natural color of the grass jelly plant. Served with a generous pour of palm sugar syrup and sometimes a scoop of coconut milk on top. It's simple, it's cold, it's exactly what you need after a spicy meal.

Nam Va also comes in a clear version (without the green coloring) and a layered version with jelly at the bottom and sweet cream on top — the green strands are the most classic form.
